These chicken bacon ranch wraps take minutes to throw together and are packed full of vegetables!
Ingredients:
3 chicken breasts, cooked and chopped
2-4 cups chopped spinach
6 slices of bacon, cooked and chopped
2 Roma tomatoes, chopped
1/2 cup ranch dressing
1 Tbsp dry ranch seasoning mix
1 cup cheddar cheese
4-6 burrito-size tortillas (see note)
Directions:
Chop up the chicken, spinach, bacon and tomatoes. Combine with the ranch dressing, seasoning mix, and cheese in a large bowl. Toss with tongs to mix well.
Warm the tortillas in the microwave for 30 seconds to make them easier to roll. Lay them out and divide the filling between the tortillas by placing it in a strip down the middle. Fold the left and right sides about an inch over and then take the side closest to you over the filling. Roll, making sure the left and right sides are tucked in.
Place the wraps seam side down in a heated pan sprayed lightly with olive oil. Flip to the other side after a few minutes to make both sides golden brown and crispy! Enjoy!
Notes:
Tortillas: The amount of wraps you'll make will be dependent on how much you want to fill them! I like to stuff them into 4 or 5 tortillas but it makes them harder to wrap.
This is a great make ahead meal! I like to make the filling ahead of time and keep in a container until we are ready to eat.

Making this for lunches for the second week in a row - it’s so good!! I make a big double batch and keep the filling in the fridge, and just fill and heat the wraps in the morning before my husband leaves for work. So easy and delicious!
