This Asian Chicken Salad is topped with mandarin oranges, chicken, wonton strips and more! It will be sure to become your go-to meal this summer!
Servings: 4-6
Ingredients:
1 head Romaine lettuce, chopped
2-3 cups red cabbage, finely shredded (optional, see note)
2 cups cooked, chopped chicken (see note)
1 cup shredded carrots
1 bunch cilantro, chopped
4 green onions, chopped
1 cup wonton strips or crunchy chow mein noodles
1 (11-oz.) can mandarin oranges
1/2 cup shelled edamame
1/3-1/2 cup Asian or sesame ginger salad dressing
sesame seeds, to garnish
Directions:
You can either toss all of the ingredients together in a large bowl or lay out all of the toppings for everyone to assemble their own bowls.
If you think you'll have leftovers, I recommend serving the wonton strips and dressing on the side to avoid anything getting too soggy overnight.
Notes:
Cabbage: The cabbage adds a great crunchy texture, but you only need about 1/4 of a head of cabbage. You could buy a bag of pre-shredded lettuce to avoid wasting the rest of the head of cabbage.
Chicken: An optional step to bring up the flavor is to marinate your chicken in teriyaki marinade for a few hours before cooking on the stove, air fryer, or grill.
