These Chocolate Raspberry Date Bars have a sweet and salty peanut & date base. Topped with raspberry jam and dark chocolate, they are a super easy healthy treat!

Servings: 12 bars
Ingredients:
1 8-oz. bag of pitted dates (about 1 1/2 cups)
1 cup peanuts
1/4-1/3 cup raspberry jam
1/2 cup chocolate chips (I use dark chocolate)
Directions:
Prepare an 8x8 dish by lining with parchment or wax paper.
In a food processor, blend together the dates and peanuts together until it is the texture of a thick paste. If the texture is too crumbly, add 1-2 Tbsp of water and blend again.
Press the date mixture into the pan. I like to use my hands for this but then use a spatula to smooth it out to make a flat surface.
Spread the jam over the date base.
Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Spread the melted chocolate chips on top of the jam.
Place the pan in the freezer for about 30 minutes until the chocolate sets.
Slice into 12 bars and store in the fridge or freezer in an airtight container.
Notes:
Dates: I used deglet noor dates which are less sweet and a little firmer than medjool dates. You should be able to substitute 8 oz. medjool dates but you may not need to add any liquid to form a thick paste.
You can easily substitute cashews for peanuts in this recipe.
