Italian Roasted Zucchini

This simple and healthy recipe is the perfect side dish for Italian food. Pair it with spaghetti and meatballs for a balanced, filling meal!




Ingredients:

  • 2 medium zucchini

  • 2 Tbsp olive oil

  • 1/2 tsp salt

  • 1/8 tsp pepper

  • 1 /2 Tbsp Italian seasoning

Directions:

  1. Preheat oven to 400 degrees F.

  2. Slice the zucchini by cutting width-wise to make 2 or 3 cylinders. Then cut each cylinder in half and then each half into 3-4 sticks (see picture).

  3. On a foil lined sheet, place the zucchini and pour the oil and seasonings on top. Mix well and then spread evenly across the pan. I like to place them skin-side down.

  4. Bake for 12-15 minutes or until fork-tender.

Notes:

  • Cooking time: I like zucchini with a little bite to it, but feel free to bake for longer if you want it softer!

  • This recipe doesn't hold well overnight because it gets pretty mushy so eat up! :)
