Jalapeño Cheddar Quick Bread

You can have this delicious quick bread ready to eat in just an hour! No kneading or rising and it's a perfect side for this Black Bean Taco Soup!



Ingredients:

  • 2 cups (240g) flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 2 tbsp sugar

  • 1 tsp salt

  • 1 tsp garlic powder

  • 1 cup plain greek yogurt

  • 1/4 cup milk

  • 1 egg

  • 1/3 cup butter, melted and cooled slightly

  • 1-2 medium sized jalapeños, deseeded, minced (see note)

  • 1 1/4 cup shredded cheddar cheese

Directions:

  1. Preheat your oven to 350 degrees. Lightly grease a loaf pan and optionally line with parchment paper.

  2. In a large bowl, whisk together the dry ingredients (flour, baking powder, baking soda, sugar, salt, and garlic powder).

  3. In a separate bowl, whisk together the yogurt, milk and egg, followed by the melted butter.

  4. Pour the yogurt mixture into the bowl of dry ingredients, and gently stir to combine.

  5. Fold in the minced jalapeño and shredded cheese. It's a pretty stiff dough so make sure the jalapeño and cheese get evenly distributed.

  6. Pour the batter into the loaf pan and bake for 45-55 minutes, or until a toothpick comes out with moist crumbs.

Notes:

  • Jalapeño: I usually do two jalapeños and it's not very spicy. I've tried it with one and didn't get much flavor, but it's up to your preference!\
