The combination of apples, sweet potatoes, pecans, and the balsamic dressing just screams fall!
Ingredients:
For the sweet potatoes:
1 large or 2 small sweet potatoes
2 Tbsp olive oil
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp paprika
1/4 tsp pepper
1/4 tsp salt
For the balsamic dressing:
3 Tbsp balsamic vinegar
1/4 cup maple syrup
2 tsp olive oil
For the rest of the salad:
4 cups of spinach
2 chicken breasts, cooked and chopped
1 granny smith apple, chopped
1/4 cup feta cheese
1/4 cup pecans
Directions:
For the sweet potatoes:
Preheat the oven to 425 degrees and line a cookie sheet with aluminum foil.
Peel and chop the sweet potatoes into small cubes and put them on the pan. Add oil and spices and mix together with your hands. Spread into an even layer.
Bake for about 30 minutes, stirring halfway through, until they are fork tender.
For the dressing:
Combine all the dressing ingredients into a small container. Put on the lid and shake to mix fully.
For the salad:
Assemble your salad. It will make about 4 servings with the following on each salad:
1 cup of spinach
1/2 cooked chicken breast
1/4 of a granny smith apple
1/4 cup of sweet potatoes
1 Tbsp feta cheese
1 Tbsp pecans
1-2 Tbsp of dressing
