This recipe turns the Vietnamese sandwich into an easy to eat rice bowl with a sweet relish and spicy yogurt sauce. Make this for a fresh and easy weeknight dinner!

Ingredients:
For the meat:
1 lb. ground pork
1 tsp sesame or olive oil
2 tsp dried basil
1 Tbsp minced garlic
1/2 bunch green onions, finely chopped
1 Tbsp soy sauce
1 Tbsp sweet Thai chili sauce or sriracha
1 ½ Tbsp sugar
1 tsp pepper
½ tsp salt
For the relish:
2 large carrots, coarsely grated
1 English cucumber, coarsely grated
2 Tbsp sugar
2 Tbsp rice or white vinegar
½ tsp salt
For the sauce:
2/3 cup plain Greek yogurt or mayo
1 Tbsp sweet Thai chili sauce
1/2 bunch green onion, finely chopped
Cooked white rice for serving
Directions:
In a large bowl or directly in a large saucepan, stir together all of the meat ingredients together.
On medium-high heat, crumble the meat for 5-10 minutes until fully cooked.
Stir together the relish ingredients in a large bowl.
Stir together the sauce ingredients in a small bowl.
Assemble the bowls by adding the rice, pork, relish and topping with the sauce.
Notes:
You can make the relish and the sauce up to a day in advance if needed.
