BBQ Chicken Bowls

These BBQ Chicken Bowls combine all the flavors of a delicious BBQ meal into one bowl! BBQ chicken, sweet potato, coleslaw, corn and pickles all come together for a quick and easy recipe to add your dinner rotation.


BBQ Chicken Bowls

Servings: about 4 servings


Ingredients:

For the chicken:

  • 2 large chicken breasts

  • 1/2 cup BBQ sauce


For the sweet potatoes:

  • 2 large sweet potatoes

  • 2 Tbsp olive oil

  • 1 tsp kosher salt

  • 1/4 tsp pepper

  • 1/2 tsp chili powder

  • 1/2 tsp garlic powder

  • 1/2 tsp oregano


For the coleslaw mix:

  • 1/4 cup mayonnaise

  • 1/2 Tbsp apple cider vinegar

  • 1 tsp sugar

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 3 cups shredded cabbage or tri-color coleslaw mix


  • 1 can (15 oz.) corn

  • pickle slices

  • more BBQ sauce to drizzle on top


Directions:

For the chicken:

  1. Spray the bottom and sides of your slow cooker with cooking spray.

  2. Trim off any excess fat on the chicken and place in an even layer in the slow cooker.

  3. Top with the BBQ sauce and cook on high heat for 2-4 hours or low heat for 4-6 hours until the chicken reaches an internal temperature of 165 degrees F.

  4. Use tongs to move the chicken breasts to a large bowl and let cool for 10 minutes before shredding with forks, a hand mixer or stand mixer.

  5. Move the shredded chicken back into the slow cooker and stir with the remaining sauce left in the slow cooker.


For the sweet potatoes:

  1. Preheat the oven to 400 degrees F and prepare with baking sheet with foil or a silicone liner.

  2. Peel and dice the sweet potatoes into 1 inch cubes.

  3. In a large bowl or directly on the pan, toss the sweet potatoes with the oil and seasonings.

  4. Bake for 20-25 minutes until the sweet potatoes are fork tender.


For the coleslaw:

  1. In a medium bowl, stir together the mayo, vinegar, sugar, salt and pepper.

  2. Add in the cabbage and toss to combine.


  1. Assemble each bowl with chicken, sweet potatoes, coleslaw, corn and pickles. Drizzle with extra BBQ sauce and enjoy!

Notes:

  • Double the chicken and freeze the extra! BBQ chicken freezes really well and you can use the extra in this meal in the future or for BBQ Chicken Pizza.

  • Make this recipe easier by buying premade coleslaw and frozen sweet potato fries!
