Blueberry Lemon Pie Bars

These easy Blueberry Lemon Pie Bars are made from cake mix and homemade blueberry pie filling! Make these for an easy handheld treat to share.



Ingredients:

  • 2 cups frozen blueberries

  • 1/3 cup sugar

  • 2 Tbsp cornstarch

  • 1 Tbsp fresh lemon juice

  • 1 Tbsp vanilla extract

  • 1 box lemon cake mix

  • 1 egg

  • 1/3 cup vegetable oil

Directions:

  1. In a small saucepan, cook blueberries on medium heat for 8-10 minutes until the berries soften, stirring occasionally.

  2. Stir in sugar and cornstarch and cook for 5 minutes until the mixture thickens,

  3. Remove from heat and stir in the lemon juice and vanilla extract. Let mixture cool fully (about 30 minutes). The blueberry filling can be made ahead of time and stored in the fridge for up to a week!

  4. Preheat the oven to 350 degrees F and grease an 8x8 baking dish.

  5. In a stand mixer with the paddle attachment or a hand mixer, beat together the cake mix, eggs, and vegetable oil until combined. It will be a loose, crumbly texture.

  6. Press half of the cake mixture into the baking dish and bake for 15 minutes.

  7. Spread the blueberry filling on top of the baked cake mixture.

  8. Sprinkle the remaining cake mixture on top of the blueberry filling.

  9. Bake the bars for 15-20 minutes until they begin to brown.

  10. Cool completely, cut and serve.


Notes:

  • You can substitute out the homemade blueberry filling for about half a can of store-bought blueberry pie filling.
