My favorite recipes are ones that involve chopping everything up and throwing it on a sheet pan! Minimal dishes, minimal thinking, and a delicious dinner all in one!
Ingredients:
1 package chicken apple sausage (pack of 4 links), sliced
3-4 vegetables of choice, chopped
(zucchini, broccoli, bell peppers, carrots, mushrooms, frozen California blend, etc.)
2 Tbsp olive oil
1 Tbsp Italian seasoning
pinch of salt
Directions:
Chop the vegetables & sausage and put them in a large bowl. If using frozen vegetables, I like to thaw them in the microwave for 2-3 minutes before adding them to the bowl.
Measure out oil & seasonings and toss to coat evenly.
Pour onto a sheet pan lined with aluminum foil and cook at 400 degrees F for 30-35 minutes, until the vegetables are tender. I usually let it go longer so that the sausage gets crispy.
Serve with rice & enjoy!
Notes:
Get creative with the seasonings! I've replaced the Italian seasoning with Cajun or garlic & herb seasoning.
I usually do two bags of frozen California blend and one green bell pepper for my vegetables!
