Chocolate oreo cookies

Servings: 12-15 cookies

Cook Time: 11 minutes

Total Time: 45 minutes

Ingredients:

For the cookies:

  • 10 oreo cookies

  • 1 1/4 cup flour

  • 1 Tbsp corn starch

  • 1/4 cup dark cocoa powder

  • 1/2 tsp baking soda

  • 1/4 tsp baking powder

  • 1/4 tsp salt

  • ½ cup butter, softened

  • ¼ cup white sugar

  • ½ cup brown sugar

  • 1 large egg

  • 1 tsp vanilla extract

For the frosting:

  • 2 Tbsp butter, softened

  • 4 oz cream cheese (1/2 block)

  • 1 cup powdered sugar

  • 1 tsp vanilla extract

  • 4 crushed Oreos, to decorate

Directions:

For the cookies:

  1. Preheat the oven to 350 degrees and line two baking sheets with parchment paper.

  2. In a food processor, grind the 10 Oreos until finely crushed.

  3. In a medium bowl, mix the crushed Oreos, flour, corn starch, cocoa powder, baking soda, baking powder, and salt. Set aside.

  4. Add the butter to the bowl of a stand mixer. On a low setting, start beating the butter and then add the sugar, mixing until just combined and there are no visible chunks of butter (1-2 minutes).

  5. Mix in the egg and vanilla.

  6. Scrape the sides and bottom of the bowl and then pour in the dry ingredients. Slowly mix until just combined.

  7. Use a cookie scoop or a heaping tablespoon to portion out 12-15 cookies and place 2 inches apart on the baking sheets.

  8. Freeze for 15 minutes to prevent them from spreading too much while baking

  9. Bake the cookies for 11 minutes and let cool fully.

For the frosting:

  1. Cream the butter, and cream cheese together.

  2. Add in the powdered sugar and vanilla. Whip on medium speed for a few minutes until light and fluffy.

  3. Frost your cookies with a large piping tip making swirls on top.

  4. Sprinkle with crushed Oreos. Serve immediately or refrigerate for a few hours and serve cold.
