Sugar Cookie Fruit Pizzas

These soft, chewy sugar cookies are topped with vanilla yogurt and assorted fruit! Top with strawberries and blueberries for the perfect red, white and blue Fourth of July dessert.


Ingredients:

For the cookies:

  • 1 stick (1/2 cup) salted butter, softened (see note)

  • 1 cup white sugar

  • 1 egg

  • 1 tsp vanilla extract

  • 1/2 tsp lemon extract

  • 1/2 cup sour cream or plain greek yogurt

  • 1 tsp baking soda

  • 2 3/4 (about 330 g) cups flour

  • 1/2 tsp salt

  • 1/4 tsp nutmeg

  • 1 tsp baking powder

For the topping:

  • 1 cup vanilla yogurt (see note)

  • Diced fruit to top (strawberries, blueberries, mandarin oranges, kiwi, etc.)

Directions:

  1. Preheat the oven to 375 degrees and line two baking sheets with parchment paper.

  2. Cut each butter stick into 5 pieces and place in your stand mixer.

  3. On a low setting, start beating the butter and then add the sugar, mixing until just combined and there are no visible chunks of butter (1-2 minutes).

  4. Mix in the egg, vanilla extract and lemon extract.

  5. In a separate bowl, stir together the sour cream and baking soda before adding to the stand mixer and mixing in. The sour cream with help activate the baking soda to result in fluffy cookies.

  6. Scrape the sides and bottom of the bowl and then pour in the flour, baking powder, salt and nutmeg. Slowly mix until just combined.

  7. Use a cookie scoop or a heaping tablespoon to portion out 12 cookies. Using a glass cup or your palm, slightly flatten the cookies.

  8. Bake for 12-14 minutes until slightly golden and cool fully on a baking rack.

  9. Add 1-2 Tbsp of yogurt on top of each cookie and sprinkle on the fruit.

Notes:

  • Butter: Soften the butter either by leaving on the counter for 30 minutes or heating in the microwave for 5-15 seconds until it is soft enough to leave an indentation but firm enough to still be solid. Make sure you don't soften too much or the dough will be too soft. I do this by rotating it every 3-4 seconds so it evenly softens.

  • Yogurt: I recommend using a sweetened yogurt for this recipe. Using a plain greek yogurt, for example, would be pretty tart and take away from the sweetness of the cookie. You could also try adding honey to an unsweetened yogurt.

  • Fourth of July: Topping with strawberries and blueberries will be a great red, white, and blue dessert for Independence Day!
