Whether you want a quick make-ahead dinner or meal prepping for easy lunches during the week, this recipe is for you!
Ingredients:
1 lb. pasta of choice (I like Garden Rotini)
1 lb. Italian sausage
1 pt. grape tomatoes or 2 Roma tomatoes
1 cucumber
1 can of black olives
1/2 bottle of creamy Italian dressing (about 1 cup)
Salt & pepper to taste
Directions:
Cook the pasta according to the directions on the box and drain.
Brown the Italian sausage with a pinch of salt and pepper.
Allow the pasta and sausage to cool while you chop your vegetables. Cut the olives in half. Slice the grape tomatoes in half or chop the Roma tomatoes. Cut the cucumbers in half length-wise and then half length-wise again. Then thickly chop so that you have thick triangles.
Stir the pasta, sausage, vegetables and Italian dressing together. Add more dressing if desired.
Add salt & pepper to taste.
If you prefer it cold (which I do), let it chill in the fridge for an hour or two.
Makes about 6 servings.
Notes:
You can substitute the sausage for pepperoni.
This recipe will work with Italian vinaigrette, but I prefer the creamy dressing!
