Creole Chicken & Sausage (Instant Pot or Slow Cooker)

This 30-minute dinner is packed with vegetables, andouille sausage and tender chicken, all covered in a sweet and spicy tomato sauce. Make quickly in your instant pot or let it cook in your slow cooker all day. Either way, serve it on top of rice and garnish it with green onions for the ultimate comfort meal!


Creole Chicken & Sausage

Servings: 4

Cook Time: 8 minutes

Total Time: 30 minutes


Ingredients:

  • 4-6 Andouille sausage (about 12 oz.), sliced into thin rounds

  • 1 medium onion, diced

  • 2 green bell peppers, diced

  • 1 (14-oz.) can black beans, rinsed and drained

  • 2 tsp minced garlic

  • 1 1/4 cup chicken broth or water with 1 tsp chicken bouillon

  • 1 (14.5-oz.) can diced tomatoes

  • 1 (6 oz.) can tomato paste

  • 2 tsp Creole or Cajun seasoning

  • 2 chicken breasts

  • 1 tablespoon brown sugar

  • salt to taste

  • 1/2 cup sliced green onions for topping

  • white rice for serving

Directions:

  1. In the base of your Instant Pot or Slow Cooker, stir together the sausage, onion, bell pepper, black beans, garlic, broth, diced tomatoes, tomato paste and Creole seasoning.

  2. Slice each chicken breast lengthwise into two thin pieces for a total of 4 pieces. Nestle the chicken in the top of pot.

  3. Pressure cook for 8 minutes (it will take a while to come to pressure) or slow cook on low for 6-8 hours until the chicken reaches an internal temperature of 165 degrees using a food thermometer.

  4. Using tongs, move the chicken onto the cutting board and shred with two forks.

  5. Stir the chicken back in and add the brown sugar and salt to taste. The amount of salt you need will depend on the Creole seasoning you use, but start with 1/2 tsp.

  6. Serve with cooked white rice and green onions.


Notes:

  • You can do this on the slow cooker setting of the Instant Pot, but it tends to run warmer than most slow cookers so I would plan on it taking 4-5 hours. Always use a food thermometer to make sure that you aren't over or undercooking your chicken!
