Easy Shepherd's Pie

Shepherd's pie is a delicious combination of ground meat, vegetables and tomato sauce with fluffy herb mashed potatoes on top. This is the perfect comfort food that you can have ready in less than 45 minutes.



Ingredients:

  • 1 pound ground turkey or beef

  • 1 medium onion, chopped

  • 2 tsp minced garlic

  • 10 ounces tomato soup

  • 1 Tbsp tomato paste

  • 1 12-oz. package of frozen mixed vegetables

  • 1 teaspoon Worcestershire sauce

  • 3/4 teaspoon salt

  • 1/8 teaspoon black pepper

  • 1 4-oz. package of instant mashed potatoes

  • 1/2 teaspoon dried rosemary

  • 1/2 teaspoon thyme

  • 1 Tbsp butter

Directions:

  1. Preheat oven to 400°F.

  2. In a large pan, cook ground meat, onion and garlic over medium heat until the meat is cooked through. Drain any excess fat.

  3. Stir in soup, tomato paste, mixed vegetables, Worcestershire sauce, salt, and pepper. Cook until the vegetables are no longer frozen and then remove from heat (about 5 minutes).

  4. Cook mashed potatoes in a separate pot, according to package directions and then stir in the dried rosemary, thyme and butter.

  5. In an 8x8 baking dish or a large pie pan, spread the meat filling and then spoon the mashed potatoes on top.

  6. Baked 20-25 minutes or until bubbly.

My daughter requested Shepherd's Pie for her birthday dinner but in my 50 years of cooking I have NEVER made a good Shepherd's Pie! This recipe was delicious! I quadrupled the recipe for our family birthday dinner and it made (2) 9x13 pans PLUS and 8x8 pan for my freezer. This recipe is delicious and very filling. We only ate 1 pan so I was able to package the second pan into smaller containers and send home with my college student kiddos for their freezers as well. Thank you Bethany! This will become a regular recipe at our house!

I really love tomatoes, so I actually added a drained can of diced tomatoes to the recipe and LOVED it! Also, I used red skinned packaged mashed potatoes because they’re my fave and it was yummy! Thank you for all your delicious recipes! (:
