Nothing beats a sheet pan dinner, especially this one packed with vegetables and a green chile kick!
Servings: 4
Cook Time: 30 minutes
Total Time: 35 minutes
Ingredients:
1 package chicken sausage (4 links), sliced
1 sweet potato, peeled and diced
1 red bell pepper, chopped
1 12-oz. bag frozen green beans
1 4-oz. can diced green chiles
2 Tbsp olive oil
2 Tbsp taco seasoning
Directions:
On a sheet pan lined with aluminum foil, toss all of the ingredients together
Bake at 400 degrees F for 30-35 minutes, until the sweet potatoes are tender. I usually let it go a little longer so that the sausage gets crispy.
Serve with rice & enjoy!
Notes:
Chicken sausage: I recommend picking one that goes well with Mexican flavors like Jalapeño Cheddar, Chipotle or Roasted Garlic.
