Hawaiian Haystacks

Hawaiian haystacks are the ultimate comfort food! Fluffy rice, a creamy sauce and a variety of toppings make this a really simple and delicious dinner.


Ingredients:

For the sauce:

  • 1 Tbsp oil

  • 1/2 onion, diced

  • 2 tsp minced garlic

  • 1 can cream of chicken soup

  • 1/2 cup chicken broth or milk

  • 2 chicken breasts, cooked and chopped (see note)

  • salt, to taste

For the haystacks:

  • Cooked rice (about 3 cups)

  • Crispy chow mein noodles (I use the La Choy brand)

  • Sliced black olives

  • Pineapple tidbits

  • Tomatoes, diced

  • Chopped green onions, chopped

  • Cheddar cheese, shredded

Directions:

  1. Heat the oil in a large skillet and add the onion and garlic, cooking until the onion is translucent.

  2. Whisk in the cream of chicken soup and chicken broth and bring to a simmer for 2-3 minutes.

  3. Stir in the cooked, chopped chicken and remove from heat.

  4. Assemble the haystacks by starting with the rice, then the sauce, and then all of the toppings.

Notes:

  • I like to cook up my chicken breasts (with plenty of salt, pepper, and garlic powder) in the same skillet that I make the sauce in. Once the chicken is fully cooked, I'll move it to a cutting board and add in the oil, scraping any brown parts from the bottom of the pan. Then add in the onion. This helps you get even more of the delicious chicken flavor in the sauce!
