Right after we got married, I asked my husband what food he could just eat a TON of and he said these pumpkin cookies his mom would make! I was surprised because he usually isn't a huge fan of sweets but I was totally sold when I made these cookies! They are the perfect amount of sweetness with a really fluffy texture.
Ingredients:
1 (15 oz.) box of yellow cake mix
1 (15 oz.) can of pumpkin
1 Tbsp. pumpkin pie spice
3/4 - 1 cup chocolate chips (I like dark chocolate chips)
Directions:
Stir together cake mix, pumpkin, and pumpkin pie spice until combined. It will take a little bit of stirring but it will eventually all mix together!
Add the chocolate chips and mix gently.
Use an ice cream scoop or small (maybe 1/4 cup) measuring cup to scoop them onto a cookie sheet.
Bake at 350 degrees for 15-18 minutes. It's hard to tell when they are done, so you can break one open and make sure that it isn't wet inside.
Notes:
You can use spice cake mix to replace both the yellow cake mix and the pumpkin pie spice! I prefer the taste of the original recipe and spice cake mix is sometimes hard to find.
Buying pumpkin pie spice is a lot cheaper at a dollar store than a grocery store.
