Red curry paste & marinara sauce make the base sauce for these delicious naan pizzas. Topped with vegetables and a squeeze of lime juice and you can have dinner ready in 15 minutes!
Ingredients:
For the sauce:
1/2 Tbsp minced garlic
2 Tbsp red curry paste
1 cup marinara or spaghetti sauce
1/4-1/2 tsp salt
1/4 tsp sugar
For the pizzas:
4-6 large naan (storebought or homemade)
1 cup cooked, shredded chicken
1 cup shredded mozzarella cheese
1/2 of a red bell pepper, diced
1 carrot, shredded (optional)
1 cup spinach, chopped
2 Tbsp cilantro, chopped
1 lime, cut into wedges
Directions:
For the sauce: In a small saucepan over medium heat, add the minced garlic, ginger paste and red curry paste. Sauté for 1-2 minutes and then whisk in the marinara sauce, salt and sugar.
For the pizzas: Preheat the oven to 375 degrees. Line two baking sheets with foil and lightly spray with oil. Spread out the naan between the two pans:
Divide out the sauce, chicken, cheese, red bell pepper, carrot and spinach.
Bake for 8-10 minutes until the cheese is melted.
Top with chopped spinach and squeeze fresh lime juice over each naan pizza before serving and enjoy!
Notes:
Don't skip the lime juice! It's really important to add some bright acidity to the naan pizzas!
