I've always thought hummus was difficult to make but all it takes is dumping ingredients in a blender! Eat this hummus with a veggie platter and pita chips!
Ingredients:
2 15-oz. cans of chickpeas
2 Tbsp reserved liquid from chickpeas
1/3 cup tahini (see picture below for the kind I used)
2 tsp minced garlic
3/4 cup roasted red pepper strips, drained (about half of a 12 oz jar)
1/3 cup lemon juice
2 Tbsp olive oil
1 1/2 tsp kosher salt
Directions
Open the can of chickpeas and put two tablespoons of the liquid into your food processor or a strong blender.
Drain both cans of chickpeas and add to your food processor along with the tahini, garlic, roasted red pepper, lemon juice, oil, and salt.
Blend until smooth. It will take a couple of minutes but you can add some more oil if it's not quite getting smooth. It worked best in my blender to do it on a lower setting for a longer time.
Top with chopped up red bell pepper for a garnish and enjoy with vegetables or pita chips.
